For a while I was keeping on top of using any banana I bought in my morning breakfast smoothie, but this week I ended up with an abundance of over ripe ones ready to be transformed into something delicious! Banana muffins are usually my go-to in this type of situation, but with limited time I opted for making bread.
This recipe is a mashup of two recipes in an old cookbook that I've been using since I was a teenager. It has a good balance of sweetness, but also includes spices to add some depth. Enjoy!
Recipe:
1/2 cup butter, softened
1 cup white sugar
2 eggs
1 cup (3-4) mashed bananas
1 tsp vanilla
1 tsp baking soda
1/4 cup milk
1 3/4 cup flour
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1 cup dark chocolate chips
Mash bananas in mixer, add in sugar, eggs, vanilla, and butter. Beat well. Add milk, flour, baking powder, salt, cinnamon, nutmeg and cloves. Mix until combined. Add chocolate chips. Bake in greased loaf pan for 50 minutes at 350F. Bread is ready when you can insert a toothpick into the center and it comes out clean.
